This issue is dedicated to the power of taste and its everlasting ties to memory. We decided to swim against the current, which dictates that authentic flavours be buried under gastronomical trends. Thus, we attempted to journey through dishes, delicacies, and recipes. What we discovered is that they contain the stories of people, families, and entire places.

ISSUE 3 UNKNOWN OCEANIC STORIES

I understood the meaning of this phrase from the beginning. My family was a family with a maritime tradition, from grandfather to father to me and my siblings. Inside the house I don’t remember us discussing anything but the sea.

I stopped the boat, we opened the holds. We reported it to the ministry. They said: “Antonio is going, he will fall into the sea, he will be eaten by the propeller.”

What other sort of melody could have sounded more familiar than that of mother nature? It sounded like a calling and we felt an impulse to go back home. And by “home”, we do not signify a specific land or building; “home” is something wider, a notion that encompasses both the physical aspects of a place and our general attitude towards living. “Home” is our activities, our beliefs, our hopes, and our dreams.

The Secrets of Mastic

In the eastern Aegean, somewhere at the crossroads of East and West, on the island of Chios mastic grows from the depths of the centuries. A product – legend, interwoven with traditions, historical circumstances, and cultural exchanges, which reaches unadulterated until today, sculpted with the culture of the eastern Mediterranean and more powerful than ever, due to the proven and scientifically now unique beneficial and therapeutic properties.

Mastic is directly linked to the culture of Chian society. Over the years, the customs and traditions of the island have been transferred to all corners of the world, due to the commercial distribution of the product. In addition, it maintains a monopolistic character on a global level, which gives new dimensions to the local identity and culture.

Mount Pelinaio is located at the northwestern tip of Chios. It is the highest mountain on the island with an altitude of 1,297 meters and is among the highest peaks in the Aegean.

You never know what it is that will tie you to a place. Sometimes it’s the fateful family story, other times it’s the random apocalyptic encounter during your adult life.

Growing up in this place, flooded with light, sounds, smells, and images of deep blue, we want to bring to the fore some of the images that we have collected well in our memory. Chios has an energy of its own. It can rivet you or you can just pass it. For us, its charm is hidden in the inland, in nature, in the preserved villages, in the stone arches, in the terraces, in the local dialect, in the hidden beaches, in the places where the deep blue of the sea meets the blue of the sky.

We will make together this journey of discovery of Chios. We will wander around medieval settlements taking with us the taste and smell of mastic. We will walk inland. We will gaze at the blue of the Aegean Sea. We will meet great people.
